Motsunabe (offal hot pot)

Our pride and joy are our soup and carefully selected Wagyu beef offal! The soup is made by slowly simmering chicken bones to keep it clear, and then seasoned lightly with a sweet and rich soy sauce called "Kanro" sourced from Kyushu, along with light soy sauce. It may seem a little bland at first, but by carefully preparing the broth and simmering it for a long time, it will not become too salty even if it reduces a bit, and will develop a rich and robust flavor. Everyone will find the deliciousness of the fat in the tecchan, akasen, and minosando sweet, and there is absolutely no unpleasant odor in the kokoro or senmai. It's a taste that you'll definitely appreciate after just one bite.

The ingredients are our proud offal meat and fresh vegetables such as cabbage, chives, and bean sprouts, piled high and cooked and stir-fried in a rich homemade miso sauce made by blending miso, soy sauce, and chili peppers in our own unique proportions.
The juices and sauce cling to each ingredient to an astonishing degree, enhancing the flavor. It has an unparalleled appeal. You can add udon noodles at the end, or stir-fry rice and eggs in it like fried rice; the flavors will meld together nicely, making it a truly delicious hot pot.
